Sweetness is more than just a taste: different sugars and sugar substitutes can vary in sweetness intensity, flavour, mouthfeel and aftertaste. But how can these differences be perceived and described through sensory evaluation?

This session introduces the fundamentals of sweet taste perception and explores the sensory properties of selected sugars and sugar substitutes. Using a range of food samples, participants will have the opportunity to experience and compare their similarities and differences firsthand. The session will also examine how the choice of sweetening ingredients influences the overall sensory profile of a food product.

Participants will gain fascinating insights into the world of sensory science and learn why selecting the right sugars and sugar substitutes is an important aspect of food product development. This session is ideal for anyone who wants to understand food not only as a consumer, but also from a scientific and sensory perspective.

As part of ISM Careers Day 2027, DLG invites you to an interactive 45-minute workshop at the DLG stand. Together, we will explore practical applications of AI in the food industry and look at how this technology is already changing the way people work.

You will receive practical tips on how to use AI as you begin your career – from research and information analysis to preparing for job interviews and tackling your first professional assignments. You will also learn how to write effective prompts and what limitations and risks to keep in mind.

The workshop will also highlight why expertise in food technology remains essential. AI-generated results need to be critically assessed and evaluated responsibly. Discover which AI skills will matter in the future and how you can prepare for a successful start to your career.

After the workshop, you will have the opportunity to meet DLG experts, ask questions and learn more about career opportunities in the food industry.
