The DLG tests fresh meat

This includes frying meat, roasting meat, braising and stewing meat, unseasoned or marinated, in self-service packages and without garnish, pork, beef/veal, mutton/lamb, game, poultry, products for the food retail trade or for bulk users.


The test criteria are:


Packaging and labelling, e.g.

  • Tightness / product protection
  • Product condition on opening
  • Quality impression
  • Functionality, handling

Sensory analysis, e.g.

  • Condition in raw state
  • Appearance in ready-to-eat state
  • Odour, taste, consistency

Laboratory analyses (spot checks), e.g.

  • Stability test
  • Checking of the authenticity of the raw material

Preparation, e.g.

  • Kitchen-specific preparation in accordance with producer’s directions for marinated self-service meat; in accordance with DLG standard for unseasoned self-service meat and checking of labelling

Depending on the number of scores achieved, the fresh meat are awarded DLG Medals in Bronze, Silver or Gold.
